Stuffed Bell Peppers

Ingredients

3 bell peppers, any color
some salt
extra-virgin olive oil
500 gram minced meat
2 chopped and fried onions
1 cup cooked brown rice
3 peeled and diced tomatoes
1 clove of garlic, peeled and chopped
fresh oregano leaves
fresh basil leaves
grated cheese

Method

  • Bring a large pan of water to a boil over high heat. Slice peppers through and remove seeds. Add peppers to boiling water for about 3 minutes. Get peppers out and set aside to cool with open side down (for optimal draining).
  • Put fried onions, garlic, meat, rice, tomatoes, basil, oregano, other seasoning to your liking into a large bowl and mix together (with your hands).
  • Arrange the cut side of the peppers up in a baking dish, drizzle olive oil inside the peppers, then stuff with filling.
  • Put grated cheese on top.
  • Put in oven for 30 – 40 minutes at 200℃.
